Cycling confusion

Hey guys, I know there are tons of posts about cycling and I've been trying to read up but I still have a few questions. I'm currently 16 days in. Here are my results from the last 3 days
Day Ammonia Nitrite Nitrate
14 1ppm 8ppm 5ppm
40%WC and Add ammonia
15 1ppm 8ppm 100ppm
40%WC no additional ammonia
16 .25ppm 8ppm 60ppm

My nitrite was at 3ppm on day 13 and has been through the roof each day since. I'm really not sure what to do at this point. I was thinking about doing a larger water change and adding a little more ammonia and seeing what happens. Any suggestions?
 
Actually it looks like you are getting there. If you are adding pure ammonia its easier to control. Adding food is more random; food will slowly release ammonia while it rots so you may not have to add more every day. Only water change to reduce nitrate, perhaps at the end, because water changing will also reduce ammonia and nitrite. You can replace the ammonia but then have to wait for nitrite to be produced so water changes can starve your nitrite munching bacteria and prevent a population from growing. Keep an eye on your pH: over 6; best around 7. Hope that helps.
